I think that Husker Du is something that he prefers to leave in the past.

Hmm yeah, but it's still worth mentioning.

They seem keen to promote the restaurant for its food, rather than one of it's proprietor's past.

He hasn't always been so keen to forget his past.

His many previous efforts at opening restaurants were complete failures:

Well, you say that, but I'm now feeling inspired to open a punk fish 'n' chip shop, and call it the Flexible Fryer. All staff will be fat, ugly, and wear flannel shirts.

He always reminded me (appearance-wise) of the chef guy from apocalypse now because of the moustache.but now the fact that hes actually a chef blends him even more with it.
