They seem keen to promote the restaurant for its food, rather than one of it's proprietor's past.

He hasn't always been so keen to forget his past.

Well, you say that, but I'm now feeling inspired to open a punk fish 'n' chip shop, and call it the Flexible Fryer. All staff will be fat, ugly, and wear flannel shirts.

He always reminded me (appearance-wise) of the chef guy from apocalypse now because of the moustache.but now the fact that hes actually a chef blends him even more with it.
