good to see you're going far with that. i'm keeping my fermentations simple as basic, you know, weekend cooking for the week, but im happy to know that you took a real liking to it. i might try mead just for shits and giggles (literally, i think).

i wasn't thinking of making sausages but i've been experimenting with simple rillettes of wild game. tough meats also need to be eaten you know. but i'll take a look and that. this isn't pig country though-- we have sheep. any good recipes for mutton sausage?
