There is a very, very large difference between 'correct' formal English and the general vernacular/ idiomatic/ sociolectical English used in general conversation. You are, of course, technically correct. However, I have never known anyone use the noun 'American' to refer to anything other than a citizen of the USA.

In fact, I took the liberty of having a cursory glance at dictionary.com which lists several uses of the word, both in the context you speak of and the more common use.
