Tapas started off as just a snack to go with a drink in a Spanish bar - generally just a plate of olives or something like that. They would served on a small plate, which would be put on top of the glass in which the drink was served - "Tapas" literally means "cover", I think. Over time the small dishes served became more elaborate, until eventually we reached the point where we are today where there are restaurants just serving tapas. Basically it is small servings of food, and you order a selection of different dishes to share. It's a real money-spinner for restaurants, as the dishes are relatively expensive, and people will order (and spend) lots more than if they were presented with a normal meal menu.
