Maple's tone is brighter, but marginal enough so that the appearance is way more important to me. I generally like maple on Strat-ish guitars and rosewood on Les Paul-ish guitars. Also depends on the color of the body. I think rosewood looks better overall, though, and I also feel like it's a bit harder to bend on. Maybe that's just me.
I don't really use maples, though, so I have very limited experience with them. My next guitar will be.
