can anybody suggest some quick, easy and cheap vegetarian that don't require a spice rack to make. i've been looking online and all, i'm more asking for personal favorites. i'm getting sick of stir fried veggies and rice...

i make mean enchiladas?
carton of sliced mushrooms, one onion, one red bell pepper, 2 cans of black beans rinsed and drained, can of chili peppers... saute until everything is soft... wrap all enchilada like in tortillas with some monterrey jack and then cover with enchilada sauce and add more cheese to top. bake for about 30-45. you can cover if you want, but i like the cheese to be brown on top so i don't cover them. veggie chili? i make that often too. |

anyway if CHEESE qualifies as veggie then lemme post a few things:
1) grilled cheese: put butter on frying pan. add a slice of bread, a thick slice of cheese, another bread on top. grill at medium-low, covered. 2) cheese omelette: whip up 3 eggs, drop into a hot buttered pan, shake shake shake, add cheese, flip, wheeeeeee, it's done. runny is best 3) omelette of any kind: as above, but with things like: mushrooms, spinach+feta, salmon, bell peppers and onions, chicken livers, and (watch tampopo)-- rice! (??). today i made one w/ sardines. i fucking love sardines. organic eggs work best because they taste fucking awesome. regular industrial eggs taste shitty. if you're concerned about the price, costco will sell you 18 organic eggs for about 5 bucks. then there's duck eggs goose eggs ostrich eggs turtle eggs etc/ |

i love my chili and so does my kid. it's super easy.
i use a big can of hot chili beans, 2 cans black beans, 1 can kidney beans, one chopped onion, one chopped red pepper, chili powder, lots of cayenne, garlic salt, a big can of stewed tomatoes and about 3/4 of small can of tomato paste... i just put it in a crock pot and let it cook all day when i'm at work. top with some cheese and sour cream... mmmm! |
